In February 2022 Tom and a small team of chefs went to the Fari Islands to deliver an exquisite 6 course tasting for guests at The Ritz-Carlton, Maldives.

Courses included; Maldivian Reef Fish with plum ponzu and Kaluga caviar, a Maldivian lobster ragout with corn & Red Snapper with saffron mayonnaise.
In addition to treating guests to a culinary adventure, Tom also read from his best-selling book ‘A Kind of Love Story‘– a behind-the-scenes peek into life in a world-renowned Michelin-starred restaurant.
