Thursday 13th July 2023 marked the long-awaited launch of Dovetale, the new restaurant from Tom Sellers, located at 1 Hotel Mayfair; London’s very first mission-driven luxury hotel, setting the standard for a new kind of luxury experience that aims to positively impact the planet.

Dovetale, is positioned on the corner of Piccadilly and Berkeley Street, nestled amongst the newly walkable Dover Yard. Sellers has been joined by a stellar line up of talent, including Tom Anglesea as Executive Head Chef of 1 Hotel Mayfair and Dovetale, Chase Loveky as Dovetale’s Head Chef and Andrew Blas as Executive Pastry Chef. Director of Wine Oliver Espersen will oversee one of London’s most extensive wine programmes, which will feature traditional bottles alongside new world wines.

Dovetale focuses on reimagined modern European cooking and Mayfair classics, inflected with Sellers’ own next-generation twist. The restaurant will utilise best in class local and UK based suppliers such as: Freedown Hills Farm, The Sea The Sea, Cacklebean Eggs, Bees & Co. and Estate Dairy.

An onsite butcher will be perfectly ageing and cutting steaks in house from the UK’s best meat suppliers, offering training and expertise to a level which is rarely found in a modern kitchen. At the raw bar, a bounty of British shellfish will be available including Scottish hand dived scallops and Cornish crab and sea bass, alongside classically garnished shucked oysters and N25 Oscietra caviar.

Two centrepiece Knickerbocker Glory trollies have been collaboratively conceptualised and designed by Sellers and Seymourpowell, offering the classic nostalgic dessert to guests, made tableside. Knickerbocker Glories will be made with a host of handmade ice-creams and toppings, from raspberry ripple and tutti frutti to birthday cake and mint choc chip.

Dovetale also includes an outdoor terrace with a hammered copper fireplace and pergola, plus a private dining space for intimate gatherings. The restaurant’s tableware has been collaboratively designed by Tom Sellers and Stefanie Hering of Hering Berlin, who have also developed the individual serving glasses for the Knickerbocker Glory trollies.
