He opened Restaurant Story in April 2013 at the age of just 26. Five months later, he won a Michelin star that has been retained each year since. Now, five years on and Story continues to develop its ever-changing seasonal tasting menu whilst incorporating Tom’s characterful, playful and ingredient-led philosophy.

Tom is also the Executive chef of The Lickfold Inn, a peaceful, re-fined pub and dining room in Petworth, West Sussex. The Grade II listed building has been lovingly restored and Tom’s Head Chef, Graham, and his team execute Tom’s menu of locally-sourced, seasonal British Classics.

Tom’s debut book, A Kind of Love Story was published in October 2016 by Orion Publishing. It is a book about cooking, but not a cook book and is an inspiring and often touching memoir of a young chef realising his ambitions.
